Entrepreneur Spotlight: Miguel Vicuna of Metropolis Coffee

Denver Style Magazine: Can you describe the experience and atmosphere at Metropolis?

Miguel Vicuna: “The experience at Metropolis is friendly and approachable. We encourage our visitors to have their coffee any way they want it, but to also keep an open mind when we make suggestions. We like to take visitors down the rabbit hole of what Specialty Coffee can be when they are ready for the adventure. There are no ‘dumb’ questions here. Our baristas will take the time to explain the menu, our coffee origins and the ins and outs of coffee.”

DSM: What do you consider a standout quality of your business?

MV: “I think the biggest standout is our consistency. Our Baristas are constantly training and tasting all the coffees we offer to make sure that everyone gets the same high quality beverage. They really push each other to do a better job and find ways to describe our coffee to customers that are approachable and accurate.”

DSM: How does Metropolis complement the neighborhood?

MV: “I believe our Lohi location fits in really well with the neighborhood. The design of the shop and interactions really fit in with all the great restaurants and bars that surround us. The customer base is mostly young professionals seeking quality products. We produce high quality drinks efficiently and take the time to share and explain our method when visitors ask. We are also located very close to the interstate, which is great for commuters in the morning, and our patio is great all year round for families and dog walkers to enjoy a nice cup of coffee and get away from the grind of the day. We try to make it a great environment for everyone that visits.”

DSM: Where or who do you draw inspiration from?

MV: “I travel a lot teaching classes for the SCAA, and on those travels I get to visit a lot of shops all around the world. I love seeing what other coffee communities are doing and try to take what they are doing great and put a Metropolis twist on it. I'm constantly looking and asking what service and hospitality means to other coffee shops. Quality coffee is growing across the world; one of the things that sets others apart is the interactions that they have with their customers.”

DSM: Where would you like your business to be in 5 years?

“I believe Metropolis Lohi will still be cranking out quality drinks and enhancing customer experiences for a long time. Possible expansion and different concepts in coffee service will be in the future, I really want to push the boundaries of what coffee service means here in the US.”

DSM: What is your favorite quote, and how does it apply to your business philosophy?

"’Don't think. FEEL. It's like a finger pointing away towards the moon. Don't concentrate on the finger or you'll miss all that heavenly glory.’ - Bruce Lee. There is so much theory and technique that goes into coffee, and sometimes we forget to look past all the technical stuff and really enjoy what we are producing.”

DSM: What is your most memorable business experience?

“The most memorable experience was probably the evening of September 12, 2013. We finally finished our build out, had all the equipment installed and permits were finished and filed, Sept. 13 we would be officially open. I remember dialing in the coffee that night making sure everything was ready for the next day. As I was standing there about to shut off the lights, I saw all the potential this shop has and couldn't wait to start serving visitors the next day morning.”
