Brandy's Banana Nut Bread

Tis' the season for carbs.  I know most of you will end up having to bake something at some point this holiday season, so I thought I would toss you an idea. I'm sharing my best banana nut bread recipe with you all. I learned it in high school and it quickly became a family favorite. Its an easy recipe and helps to get rid of those bananas that bruised a little too quickly (older bananas are more flavorful, fyi).


  • 1/2 cup cooking oil
  • 1 cup sugar
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/2 chopped nuts


Preheat oven to 350 degrees F.

Beat oil and sugar together. Add eggs and banana pulp and beat well. Add sifted dry ingredients, milk, vanilla.

Mix well and stir in nuts. Pour in foil lined loaf pan. Bake in oven for 1 hour. Cool well and enjoy!
